Description

These Taco Potatoes are a fun, hearty twist on the classic taco, with fluffy baked potatoes filled with seasoned ground beef and topped with all your favorite taco ingredients! Perfect for a family meal or dinner gathering.


Ingredients

  1. 4 to 6 medium Russet potatoes
  2. 1 pound lean ground beef
  3. 1 packet (1 ounce) taco seasoning
  4. 1 cup shredded lettuce
  5. 1 cup cheddar cheese, shredded
  6. 1/2 cup sour cream
  7. 1/2 cup salsa
  8. 1/2 cup guacamole
  9. 2 green onions, sliced

Instructions

  • Preheat your oven to 400° F.
  • Wash the potatoes thoroughly in water and then pat them dry with paper towels.
  • Poke a few holes in each potato using a fork, then wrap each potato in aluminum foil.
  • Place the wrapped potatoes in the oven and bake for 1 hour.
  • Carefully remove the hot potatoes from the oven and set them aside to cool slightly.
  • In a large skillet, brown and crumble the ground beef over medium-high heat until fully cooked.
  • Drain any excess grease from the skillet.
  • Add the taco seasoning to the beef along with the amount of water specified on the seasoning packet.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10 minutes.
  • Remove the foil from the potatoes and carefully cut a slit in the top of each potato to open them up.
  • Fill each potato with the seasoned ground beef and top with your favorite taco toppings, such as lettuce, cheese, sour cream, salsa, guacamole, and green onion.

Notes

  • You can easily customize the toppings based on your preferences—try adding diced tomatoes, jalapeños, or olives!
  • You can also use ground turkey or chicken for a lighter version.
