Taco Mac is the perfect blend of cheesy macaroni and flavorful taco meat! This easy, one-pot dish combines the creamy goodness of mac and cheese with seasoned ground beef (or turkey) and zesty Rotel tomatoes. It’s an irresistible family favorite, great for weeknight dinners!

Ingredients

Scale
  1. 1 pound ground beef or ground turkey
  2. 2 boxes macaroni and cheese (with boiling water, milk, and butter as usual ingredients)
  3. 1 can Rotel (seasoned diced tomatoes)
  4. 1 packet taco seasoning (usually requires water)

Instructions

  • Prepare the Macaroni and Cheese: In a large pot, prepare the macaroni and cheese according to the instructions on the box.
  • Brown the Meat: In a separate pan, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat.
  • Season the Meat: Add the taco seasoning (and water as instructed on the packet) to the cooked meat. Stir until fully combined and simmer for a few minutes.
  • Add the Rotel: Stir in the can of Rotel tomatoes with the seasoned meat. Let it heat up and simmer while the flavors combine.
  • Combine: Add the prepared macaroni and cheese into the meat mixture. Stir well until everything is combined and heated through.
  • Serve: Enjoy your cheesy Taco Mac! Serve warm for a comforting meal.

Notes

  • You can swap out ground beef for ground turkey for a leaner option.
  • Adjust the level of spice by choosing a mild or spicy can of Rotel, depending on your preference.
