Ingredients

Scale
  1. 1 pound ground beef or ground turkey
  2. 2 boxes Macaroni and Cheese – your preferred brand (boiling water, milk, and butter are usual ingredients)
  3. 1 can Rotel (seasoned diced tomatoes)
  4. 1 packet taco seasoning (usually requires water)

Instructions

  1. Prepare Macaroni and Cheese:

    • In one pot, prepare the macaroni and cheese according to the package instructions, using boiling water, milk, and butter as required. Set aside once cooked.
  2. Brown the Ground Beef:

    • In a separate pan, brown the ground beef (or turkey) over medium-high heat. Drain any excess fat.
  3. Season the Meat:

    • Add the taco seasoning packet to the ground beef, along with the required amount of water (check the seasoning packet instructions). Stir until combined and cook until the mixture thickens slightly.
  4. Add Rotel Tomatoes:

    • Stir in the can of Rotel tomatoes (with liquid) into the seasoned meat. Let it simmer for 5-7 minutes to warm through.
  5. Combine Everything:

    • Once the macaroni and cheese is ready, add it to the meat mixture. Stir until everything is well combined and heated through.
  6. Serve Hot:

    • Enjoy this creamy and flavorful Taco Mac while it’s warm! Serve as-is or top with shredded cheese, sour cream, avocado, or fresh cilantro for extra flair.

Notes

  • Use gluten-free mac and cheese for a gluten-free option.
  • Substitute ground beef with ground chicken or turkey for a lighter protein source.
  • For added veggies, stir in diced bell peppers or onions while browning the meat.
