Description

This Taco Casserole is the perfect mix of savory ground beef, melty cheese, and zesty taco seasoning. Layered over crunchy tortilla chips and baked to perfection, it’s a crowd-pleasing meal perfect for family dinners, parties, or busy weeknight


Ingredients

  1. 1 lb ground beef

  2. 1 (1 1/4 ounce) envelope taco seasoning

  3. 1 (10 1/2 ounce) can mushroom soup

  4. 1 (8 ounce) can beef broth

  5. 1 (14 ounce) can Rotel (diced tomatoes with green chilies)

  6. 6 slices cheddar cheese

  7. 1 (8 ounce) bag tortilla chips


Instructions

  • Brown the Ground Beef: In a large skillet, brown the ground beef over medium heat until fully cooked.

  • Add the Seasoning and Liquids: Stir in taco seasoning, mushroom soup, beef broth, and Rotel tomatoes. Bring to a simmer and cook for 5-10 minutes to allow the flavors to blend.

  • Prepare the Casserole Dish: Pour the tortilla chips into the bottom of a casserole dish (do not crush, keep them whole).

  • Assemble the Casserole: Pour the beef mixture over the chips and spread it evenly.

  • Top with Cheese: Place sliced cheddar cheese on top of the casserole.

  • Bake: Bake at 375°F for about 10 minutes, or until the cheese is melted and bubbly.

 

  • Serve: Remove from the oven and serve immediately. Enjoy!


Notes

  • For extra flavor, you can add a dollop of sour cream or guacamole on top when serving.

  • If you prefer a spicier casserole, opt for spicy Rotel or add jalapeños to the beef mixture.

 

  • You can also substitute the cheddar cheese with a mix of Mexican blend cheese for added flavor.
