    • 8 oz cream cheese, softened
    • 1/2 cup powdered sugar
    • 1/4 cup freeze-dried strawberries, finely crushed
    • 1 teaspoon vanilla extract

    For the Coating and Garnish:

    • 2 cups white chocolate chips, melted
    • Pink or red sprinkles (optional, for garnish)

Instructions

  • Prepare the Truffle Mixture:
    In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar, crushed freeze-dried strawberries, and vanilla extract. Mix until fully combined and evenly pink. Cover with plastic wrap and refrigerate for 30 minutes or until firm enough to handle.
  • Shape the Truffles:
    Using a small cookie scoop or spoon, scoop out portions of the mixture and roll into 1-inch balls with your hands. Place the truffle balls on a parchment-lined baking sheet. Freeze for 15-20 minutes to set.
  • Coat the Truffles:
    Melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth. Using a fork or dipping tool, dip each chilled truffle ball into the melted white chocolate, ensuring it’s fully coated. Place the coated truffles back on the parchment-lined sheet. Add sprinkles immediately if desired.
  • Chill and Serve:
    Refrigerate the truffles for 30 minutes or until the coating is firm. Serve chilled and enjoy!
