These delicious Strawberry and Cream Cheese Pineapple Buns are soft, fluffy, and filled with creamy strawberry goodness! Topped with a buttery pineapple crust, they are perfect for breakfast or a sweet treat.

  1. For the Dough
    • 2 cups all-purpose flour
    • 1/2 cup warm milk
    • 1/4 cup granulated sugar
    • 1/4 cup unsalted butter, softened
    • 1 large egg
    • 1 teaspoon instant yeast
    • 1/2 teaspoon salt

    For the Topping (Pineapple Crust)

    • 1/2 cup unsalted butter, softened
    • 1/2 cup powdered sugar
    • 1 cup all-purpose flour
    • 1/4 cup cornstarch
    • 1 teaspoon baking powder
    • 1/2 teaspoon vanilla extract
    • 1 tablespoon milk (if needed)

    For the Filling

    1. 4 oz cream cheese, softened
    2. 1/4 cup strawberry jam (or fresh strawberries, chopped)
    3. 1 tablespoon powdered sugar (optional)

Instructions

  • Prepare the Dough
    • In a large bowl, combine the warm milk, sugar, and instant yeast. Let it sit for about 5 minutes until frothy.
    • Add the softened butter, egg, flour, and salt to the yeast mixture. Mix until a dough forms.
    • Transfer the dough to a floured surface and knead for about 8-10 minutes, or until smooth and elastic.
    • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Prepare the Topping (Pineapple Crust)
    • In a mixing bowl, cream together the softened butter and powdered sugar. Add the flour, cornstarch, baking powder, and vanilla extract. Mix until a smooth dough forms. If the mixture is too crumbly, add a tablespoon of milk.
    • Wrap the topping dough in plastic wrap and refrigerate while the dough rises.
  • Prepare the Filling
    • In a small bowl, combine the softened cream cheese, strawberry jam, and powdered sugar (if using). Mix until smooth.
  • Assemble the Buns
    • Once the dough has risen, punch it down and divide it into 8 equal pieces. Flatten each piece into a circle.
    • Place a spoonful of the cream cheese and strawberry mixture in the center of each circle. Fold the edges over the filling and pinch to seal, forming a ball.
    • Place the filled dough balls seam-side down on a baking sheet lined with parchment paper. Cover and let rise for another 30-40 minutes.
  • Bake the Buns
    • Preheat your oven to 350°F (175°C).
    • Take the chilled pineapple crust dough and divide it into 8 pieces. Flatten each piece and place it on top of each dough ball, gently pressing down.
    • Bake the buns for 15-20 minutes, or until golden brown.

Notes

  • You can substitute fresh strawberries for strawberry jam if you prefer a more natural flavor.
