For the Topping (Pineapple Crust)
- 1/2 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 tablespoon milk (if needed)
For the Filling
- 4 oz cream cheese, softened
- 1/4 cup strawberry jam (or fresh strawberries, chopped)
- 1 tablespoon powdered sugar (optional)
Instructions
- Prepare the Dough
- In a large bowl, combine the warm milk, sugar, and instant yeast. Let it sit for about 5 minutes until frothy.
- Add the softened butter, egg, flour, and salt to the yeast mixture. Mix until a dough forms.
- Transfer the dough to a floured surface and knead for about 8-10 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Prepare the Topping (Pineapple Crust)
- In a mixing bowl, cream together the softened butter and powdered sugar. Add the flour, cornstarch, baking powder, and vanilla extract. Mix until a smooth dough forms. If the mixture is too crumbly, add a tablespoon of milk.
- Wrap the topping dough in plastic wrap and refrigerate while the dough rises.
- Prepare the Filling
- In a small bowl, combine the softened cream cheese, strawberry jam, and powdered sugar (if using). Mix until smooth.
- Assemble the Buns
- Once the dough has risen, punch it down and divide it into 8 equal pieces. Flatten each piece into a circle.
- Place a spoonful of the cream cheese and strawberry mixture in the center of each circle. Fold the edges over the filling and pinch to seal, forming a ball.
- Place the filled dough balls seam-side down on a baking sheet lined with parchment paper. Cover and let rise for another 30-40 minutes.
- Bake the Buns
- Preheat your oven to 350°F (175°C).
- Take the chilled pineapple crust dough and divide it into 8 pieces. Flatten each piece and place it on top of each dough ball, gently pressing down.
- Bake the buns for 15-20 minutes, or until golden brown.
Notes
- You can substitute fresh strawberries for strawberry jam if you prefer a more natural flavor.
