  1. 1 ½ pounds ground beef
  2. 1 tablespoon olive oil
  3. 1 tablespoon sesame oil
  4. ¼ cup soy sauce
  5. 2 tablespoons brown sugar
  6. 2 tablespoons gochujang (Korean chili paste)
  7. 1 teaspoon garlic, minced
  8. 1 teaspoon ginger, minced
  9. 1 tablespoon rice vinegar
  10. 1 egg
  11. 1 cup panko breadcrumbs
  12. 1 tablespoon green onions, sliced (for garnish)
  13. Sesame seeds (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C) and grease a loaf pan.
  • In a large mixing bowl, combine the ground beef, sesame oil, soy sauce, brown sugar, gochujang, garlic, ginger, rice vinegar, egg, and panko breadcrumbs.
  • Mix until well combined, then shape the mixture into a loaf and place it in the prepared loaf pan.
  • Bake for 40-45 minutes, or until fully cooked and browned on top.
  • In the last 10 minutes of baking, brush extra gochujang mixed with honey over the meatloaf to create a sweet and spicy glaze.
  • Once baked, remove from the oven and let rest for 5 minutes.
  • Slice the meatloaf and garnish with sliced green onions and sesame seeds before serving.

Notes

  • For a milder version, reduce the amount of gochujang.
  • Pair with steamed rice or roasted vegetables for a complete meal.
  • Leftovers can be refrigerated in an airtight container for up to 3 days.
