Description

This Homemade McGriddle brings the perfect sweet-and-savory breakfast sandwich right to your kitchen! Fluffy maple-infused pancake buns sandwich crispy sausage, melty cheese, and a fried egg—just like the fast food favorite but even better

Ingredients

For the pancake buns:
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
¼ teaspoon baking soda
Pinch of salt
1 egg
¾ cup milk
1 tablespoon melted butter
2 tablespoons maple syrup (plus extra for drizzling)
For the filling:
4 breakfast sausage patties
4 slices American cheese
4 eggs
Butter or oil (for cooking)

Instructions

In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add egg, milk, melted butter, and maple syrup. Mix until just combined.
Heat a lightly greased skillet over medium heat. Pour small rounds of batter (3–4 inches wide). Cook until bubbles form, then flip and cook the other side. You should get 8 mini pancakes.
In another pan, cook sausage patties over medium heat until browned and cooked through. Set aside.
Fry eggs to your preference using butter or oil. Use an egg ring for a classic round shape, if desired.
To assemble, place one pancake on the bottom, layer with sausage, cheese, and egg. Top with another pancake. Drizzle with extra maple syrup if desired.

Notes

You can substitute bacon for sausage. Pancake buns can be made ahead and frozen. Reheat in a toaster or skillet. For extra flavor, add a touch of vanilla extract to the pancake batter.
