This Sweet & Salty Toffee Chex Mix is a perfect balance of crunchy, buttery, and irresistibly sweet toffee-coated goodness. Packed with cereal, nuts, and pretzels, it’s the ideal treat for family movie nights, holiday gifting, or anytime snacking. You won’t be able to stop at just one handful!

  1. 12.8 oz box Rice or Corn Chex Cereal
  2. 3 cups assorted nuts (pecans, almonds, peanuts, etc.)
  3. 3 cups pretzel thins or mini knots
  4. 1 cup unsalted butter
  5. 2 cups dark brown sugar
  6. ¾ cup light corn syrup
  7. 1 tsp salt
  8. 2 tsp pure vanilla extract
  9. 1 tsp baking soda

Instructions

  1. Preheat Oven:
    Preheat the oven to 250°F (120°C) and line two baking sheets with foil. Spray generously with cooking spray.
  2. Prepare Cereal Mixture:
    In a large mixing bowl, combine Chex cereal, nuts, and pretzels. Set aside.
  3. Make Toffee:
    In a large saucepan, melt the butter over medium heat. Add the brown sugar, corn syrup, and salt. Stir frequently and bring to a boil. Let it boil for 2 minutes, then remove from heat.
  4. Finish Toffee:
    Stir in the vanilla extract carefully, then mix in the baking soda. The toffee will bubble up—continue stirring!
  5. Coat the Cereal Mixture:
    Pour the hot toffee over the cereal mixture and gently fold to coat everything evenly.
  6. Bake:
    Spread the mixture onto the prepared baking sheets. Bake for 30–55 minutes, stirring every 15 minutes. The shorter the bake time, the chewier the toffee; longer for a crispier version.
  7. Cool and Serve:
    Remove from the oven and stir occasionally until cooled. Once set, transfer to a bowl and enjoy!
