- ⅔ cup light corn syrup
- ¼ cup maple syrup
- ¾ cup white granulated sugar
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter
Instructions
- Line a large baking sheet with parchment paper and set aside.
- Pour the cornflake cereal into a large bowl and set aside.
- In a medium saucepan over medium-low heat, combine light corn syrup and maple syrup. Stir occasionally until the mixture becomes slightly bubbly, about 3–4 minutes.
- Turn off the heat and stir in the sugar and vanilla extract until well combined.
- Mix in the creamy peanut butter using a rubber spatula. The mixture will be thick and sticky.
- Pour the peanut butter mixture over the cornflakes and stir gently until the cereal is evenly coated.
- Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet.
- Let the cookies set at room temperature for 10–15 minutes before serving.
Notes
- Work quickly when shaping the cookies, as the mixture sets fast.
- Store in an airtight container at room temperature for up to 1 week.
