  • 5 cups cornflake cereal
  • ⅔ cup light corn syrup
  • ¼ cup maple syrup
  • ¾ cup white granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter

Instructions

  1. Line a large baking sheet with parchment paper and set aside.
  2. Pour the cornflake cereal into a large bowl and set aside.
  3. In a medium saucepan over medium-low heat, combine light corn syrup and maple syrup. Stir occasionally until the mixture becomes slightly bubbly, about 3–4 minutes.
  4. Turn off the heat and stir in the sugar and vanilla extract until well combined.
  5. Mix in the creamy peanut butter using a rubber spatula. The mixture will be thick and sticky.
  6. Pour the peanut butter mixture over the cornflakes and stir gently until the cereal is evenly coated.
  7. Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet.
  8. Let the cookies set at room temperature for 10–15 minutes before serving.

  • Work quickly when shaping the cookies, as the mixture sets fast.
