Description
These Sweet Potato Chickpea Patties are crispy on the outside, soft on the inside, and packed with nourishing ingredients. Served with a tangy and creamy avocado sauce, they make the perfect vegetarian main or side.
Ingredients
Scale
- 2 medium sweet potatoes, peeled and cubed
- 1 (15 oz) can chickpeas, drained and rinsed
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley or cilantro, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup breadcrumbs (or oat flour for gluten-free)
- 1 egg (or flax egg for vegan option)
- Olive oil for pan-frying
- For the Creamy Avocado Sauce:
- 1 ripe avocado
- 2 tablespoons Greek yogurt (or coconut yogurt for vegan)
- 1 tablespoon lime juice
- 1 garlic clove
- Salt and pepper to taste
- 2–3 tablespoons water to thin, as needed
Instructions
- Boil or steam sweet potatoes until fork-tender, then mash in a large bowl.
- Roughly mash chickpeas and add to the sweet potatoes.
- Stir in onion, garlic, herbs, spices, breadcrumbs, and egg. Mix well. The mixture should be firm enough to shape—add more breadcrumbs if too wet.
- Shape into 8 small or 4 large patties.
- Heat olive oil in a nonstick skillet over medium heat. Cook patties 3–4 minutes per side until golden and crisp.
- Blend all avocado sauce ingredients in a food processor or blender until smooth. Adjust water for desired consistency.
- Serve patties warm with a generous drizzle of avocado sauce, and optionally with greens or inside pita bread.
Notes
- These patties can be made ahead and stored in the fridge for up to 3 days.
- If you prefer a vegan option, substitute the egg with a flax egg and use coconut yogurt for the sauce.
- For a more filling meal, serve the patties with a side salad or roasted vegetables.
- Use oat flour instead of breadcrumbs for a gluten-free version.
