Description

These Sweet Potato Chickpea Patties are crispy on the outside, soft on the inside, and packed with nourishing ingredients. Served with a tangy and creamy avocado sauce, they make the perfect vegetarian main or side.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup breadcrumbs (or oat flour for gluten-free)
  • 1 egg (or flax egg for vegan option)
  • Olive oil for pan-frying
  • For the Creamy Avocado Sauce:
  • 1 ripe avocado
  • 2 tablespoons Greek yogurt (or coconut yogurt for vegan)
  • 1 tablespoon lime juice
  • 1 garlic clove
  • Salt and pepper to taste
  • 23 tablespoons water to thin, as needed

Instructions

  1. Boil or steam sweet potatoes until fork-tender, then mash in a large bowl.
  2. Roughly mash chickpeas and add to the sweet potatoes.
  3. Stir in onion, garlic, herbs, spices, breadcrumbs, and egg. Mix well. The mixture should be firm enough to shape—add more breadcrumbs if too wet.
  4. Shape into 8 small or 4 large patties.
  5. Heat olive oil in a nonstick skillet over medium heat. Cook patties 3–4 minutes per side until golden and crisp.
  6. Blend all avocado sauce ingredients in a food processor or blender until smooth. Adjust water for desired consistency.
  7. Serve patties warm with a generous drizzle of avocado sauce, and optionally with greens or inside pita bread.

Notes

  • These patties can be made ahead and stored in the fridge for up to 3 days.
  • If you prefer a vegan option, substitute the egg with a flax egg and use coconut yogurt for the sauce.
  • For a more filling meal, serve the patties with a side salad or roasted vegetables.
  • Use oat flour instead of breadcrumbs for a gluten-free version.
