Instructions

  1. In a skillet over medium heat, cook the ground beef with half the diced onion and ¼ teaspoon salt until browned and fully cooked. Drain any excess fat.
  2. Stir in apple cider vinegar, sugar, Worcestershire sauce, ketchup, chili powder, and the remaining ¼ teaspoon salt. Let it simmer for 5–7 minutes until thick and flavorful. Remove from heat.
  3. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes until it forms a bubbly roux.
  4. Gradually whisk in the milk, stirring constantly, until the sauce thickens. Remove from heat and stir in shredded cheddar cheese until smooth and melty.
  5. Arrange tortilla chips on a large serving platter or baking sheet.
  6. Spoon the sloppy joe beef mixture evenly over the chips.
  7. Drizzle the cheese sauce generously over the top.
  8. Garnish with remaining diced onion and fresh jalapeño slices.
  9. Serve immediately while hot and gooey!
