Description

  1. 1 pound smoked sausage, sliced

  2. 4 medium potatoes, diced

  3. 2 tablespoons olive oil

  4. 1/4 cup brown sugar

  5. 1/4 cup soy sauce

  6. 2 tablespoons Dijon mustard

  7. 1 teaspoon garlic powder

  8. 1 teaspoon onion powder

  9. Salt and pepper to taste

  10. Fresh parsley, chopped (for garnish)


Instructions

  • Preheat your oven to 400°F (200°C).

  • In a large bowl, combine the diced potatoes and olive oil. Toss to coat evenly.

  • Spread the potatoes in a single layer on a baking sheet and season with salt and pepper.

  • Roast in the oven for 20 minutes, stirring halfway through.

  • While the potatoes are roasting, in a separate bowl, mix together the brown sugar, soy sauce, Dijon mustard, garlic powder, and onion powder until well combined.

  • After 20 minutes, remove the potatoes from the oven and add the sliced sausage to the baking sheet.

  • Drizzle the glaze over the sausage and potatoes, tossing to coat everything evenly.

  • Return to the oven and roast for an additional 15-20 minutes, until the potatoes are tender and the sausage is heated through and caramelized.

 

  • Garnish with fresh parsley before serving.
