Description

This Easy One Bowl Coconut Lemon Slice is a soft, chewy, and zesty treat made without a mixer—perfect for lunchboxes, morning tea, or whenever you crave a sweet, tangy homemade bite.


Ingredients

  • 1 cup self-raising flour
  • 1 cup desiccated coconut
  • 1 cup white sugar
  • Zest of 1 large lemon
  • 125g (1/2 cup) butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • Icing:
  • 1 cup icing sugar
  • 12 tablespoons lemon juice
  • Extra desiccated coconut, for sprinkling

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a 20cm x 20cm (8-inch) square baking tin with parchment paper.
  2. In a large mixing bowl, combine self-raising flour, coconut, sugar, and lemon zest.
  3. Add the melted butter, eggs, vanilla, and lemon juice. Stir until just combined — no mixer needed!
  4. Pour the batter into the prepared tin and smooth the top.
  5. Bake for 25–30 minutes or until golden and a skewer comes out clean.
  6. Allow to cool in the tin for 10 minutes before transferring to a wire rack.
  7. Mix icing sugar with lemon juice to form a smooth glaze. Drizzle over the cooled slice and sprinkle with extra coconut.
  8. Once set, slice into squares and enjoy!
