- 1.2 kg / 2.5 lb potatoes (Desiree, Yukon Gold, or Maris Piper)
- 1 1/2 cups low-sodium chicken stock/broth
- 1/2 cup olive oil
- 1/3 cup lemon juice
- 5 garlic cloves, finely grated (using a microplane)
- 1 tbsp dried oregano
- 2 tsp salt
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cut the potatoes into wedges. Place them in a large baking dish.
- In a bowl, whisk together the chicken stock, olive oil, lemon juice, grated garlic, dried oregano, and salt. Pour this mixture over the potatoes in the baking dish, making sure the potatoes are well coated.
- Cover the baking dish with foil and bake for 40 minutes.
- After 40 minutes, remove the foil and continue baking for another 20–25 minutes, or until the potatoes are tender and golden, occasionally basting with the pan juices.
- Garnish with lemon wedges and fresh oregano leaves before serving. Enjoy your flavorful Greek lemon potatoes!
