- 4 medium sweet potatoes
- 1 tbsp olive oil
- 1 cup (225g) fresh spinach
- 1 cup (100g) mushrooms, sliced
- 1/2 cup (75g) crumbled feta cheese
- 1 garlic clove, minced
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions
Bake Sweet Potatoes:
- Preheat your oven to 400°F (200°C).
- Wash and dry the sweet potatoes, then prick them a few times with a fork.
- Place them on a baking sheet and bake for 45-50 minutes, or until tender.
Prepare the Filling:
- In a skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in mushrooms and cook until they release their moisture and start to brown.
- Add spinach and cook until wilted. Season with salt and pepper.
Stuff the Sweet Potatoes:
- Once baked, carefully slice each sweet potato lengthwise and gently fluff the flesh with a fork.
- Spoon the spinach and mushroom mixture into the sweet potatoes.
- Top with crumbled feta cheese.
Optional Garnish:
- Add a sprinkle of fresh parsley and a drizzle of olive oil if desired.
Serve and Enjoy:
Serve warm as a healthy main dish or side dish.
