These stuffed sweet potatoes are a delicious and healthy meal, filled with sautéed spinach, mushrooms, and crumbled feta. Perfect for a nutritious lunch or dinner, they provide a great balance of flavors and are sure to please any palate!

Ingredients

  1. 4 medium sweet potatoes
  2. 1 tbsp olive oil
  3. 1 cup (225g) fresh spinach
  4. 1 cup (100g) mushrooms, sliced
  5. 1/2 cup (75g) crumbled feta cheese
  6. 1 garlic clove, minced
  7. Salt and pepper to taste
  8. Optional: fresh parsley for garnish

Instructions

Bake Sweet Potatoes:

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes, then prick them a few times with a fork.
  3. Place them on a baking sheet and bake for 45-50 minutes, or until tender.

Prepare the Filling:

  1. In a skillet, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in mushrooms and cook until they release their moisture and start to brown.
  4. Add spinach and cook until wilted. Season with salt and pepper.

Stuff the Sweet Potatoes:

  1. Once baked, carefully slice each sweet potato lengthwise and gently fluff the flesh with a fork.
  2. Spoon the spinach and mushroom mixture into the sweet potatoes.
  3. Top with crumbled feta cheese.

Optional Garnish:

  1. Add a sprinkle of fresh parsley and a drizzle of olive oil if desired.
