Ingredients

  • Bell peppers (yellow or red), tops cut off and seeded
  • Ground beef or turkey
  • Cooked rice
  • Chopped onion
  • Tomato sauce or diced tomatoes
  • Shredded mozzarella or Italian cheese blend
  • Garlic, minced
  • Salt
  • Pepper
  • Oregano

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook ground beef or turkey with chopped onion until browned and cooked through.
  3. Stir in cooked rice, tomato sauce or diced tomatoes, garlic, salt, pepper, and oregano. Simmer for 5 minutes to blend flavors.
  4. Stuff each bell pepper with the meat and rice mixture.
  5. Place stuffed peppers upright in a baking dish and top with shredded cheese.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil and bake an additional 10 minutes, until cheese is bubbly and golden.
