Description

This creamy, cheesy Street Corn Chicken Casserole combines tender chicken, southwest corn, and a perfect blend of spices for a mouthwatering dish.   1. 1 block of softened cream cheese

  2. 2 cups shredded cooked chicken (fajita blend shredded chicken recommended)

  3. 1 cup sour cream

  4. 3 cans of corn (southwest blend preferred)

  5. 2 cups shredded fiesta blend cheese

  6. 23 teaspoons chili powder

  7. 23 teaspoons onion powder

  8. 23 teaspoons garlic powder

  9. 23 teaspoons Slap Ya Mama seasoning (or any Cajun seasoning)

  10. 1/2 cup grated Parmesan cheese (for topping)


Instructions

  • Preheat oven to 350°F (175°C).

  • In a casserole dish, combine the softened cream cheese, shredded chicken, sour cream, and corn.

  • Add chili powder, onion powder, garlic powder, and Slap Ya Mama seasoning. Mix everything well until smooth.

  • Sprinkle shredded fiesta blend cheese over the mixture and top with grated Parmesan cheese.

  • Bake for 35 minutes or until golden and bubbly on top.

 

  • Remove from oven, let cool slightly, and serve warm. Enjoy your creamy, cheesy casserole!


Notes

  • Feel free to use any type of shredded cooked chicken, but fajita or rotisserie chicken adds great flavor.

  • Adjust seasoning to taste based on your preference for heat and spice.
