  3. 1 tbsp fresh lemon juice
  4. 2 cups mascarpone cheese
  5. 1 cup powdered sugar
  6. 1 tsp vanilla extract
  7. 34 cups fresh strawberries, sliced
  8. About 38 ladyfingers

Instructions

  • In a medium bowl, whisk together strawberry preserves, orange juice, and lemon juice until fully combined. Set aside.

  • In a separate large bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.

  • Dip each ladyfinger into the strawberry mixture for a few seconds, ensuring they’re well-soaked but not soggy. Arrange them at the bottom of a serving dish (a 9×13-inch pan works well).

  • Spread a layer of the mascarpone mixture over the ladyfingers, smoothing it out with a spatula. Then, add a layer of sliced strawberries on top.

  • Repeat the layers: Dip the remaining ladyfingers into the strawberry mixture and layer them on top of the mascarpone, followed by another layer of mascarpone and strawberries.

  • Once all the layers are completed, cover the pan and refrigerate overnight to allow the flavors to meld together.

  • Serve chilled, and enjoy this fruity, creamy treat!
