- For the Cake:
- 2 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 5 large eggs
- 2 cups sugar
- ¼ cup whole milk
- ½ cup heavy cream
- 5 tablespoons butter
- 1 teaspoon vanilla extract
- 2 cups diced fresh strawberries
For the Homemade Whipped Cream:
- 2 cups heavy whipping cream
- ¼ cup sugar
- 1 teaspoon vanilla extract
- ¼ cup strawberry puree (blend strawberries in food processor)
- ½ cup finely chopped strawberries
Instructions
- Preheat the oven to 350°F (175°C). Spray a baking sheet with non-stick cooking spray. Set aside.
- For the Cake:
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat eggs until combined. Add sugar and beat for about 3 minutes, until the mixture is nice and creamy.
- Add the dry ingredients to the wet ingredients and mix until well combined.
- In a small saucepan, heat milk, heavy cream, and butter over low heat just until the butter is melted. Slowly add this mixture to the batter, followed by vanilla extract. Mix until combined.
- Pour the batter into the prepared baking sheet and bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
- Once the cake has cooled, use a biscuit cutter to cut circles into the cake, making them the desired size.
- For the Homemade Whipped Cream:
- In a medium bowl, beat heavy whipping cream, sugar, and vanilla on high speed until stiff peaks form.
- Fold in the strawberry puree and chopped strawberries.
- Spread whipped cream on top of half of the shortcake circles.
- Place the other shortcake circle on top, and spread additional whipped cream on top.
- Add a heaping tablespoon of diced strawberries on top, and additional whipped cream if desired.
- Serve and enjoy!
Notes
- You can also add a drizzle of strawberry syrup or extra fresh berries for extra sweetness.
- For a more flavorful whipped cream, you can increase the amount of strawberry puree.
