Description

These Strawberry Shortcake Cheesecake Rolls are a decadent, fun twist on traditional shortcake! A creamy cheesecake filling, fresh strawberries, and sweet strawberry preserves rolled into a vanilla cookie base. Drizzled with white chocolate, this treat is perfect for any dessert lover


Ingredients

  1. For the Base:

    • Vanilla sandwich cookies

    • Unsalted butter

    For the Cheesecake Filling:

    • Cream cheese

    • Powdered sugar

    • Vanilla extract

    • Heavy cream

    For the Assembly:

    1. Fresh strawberries

    2. Strawberry preserves

    3. White chocolate chips


Instructions

  • Prepare “Sushi Rice” Base:

    • Crush the vanilla sandwich cookies in a food processor.

    • Mix in the melted butter until the mixture has the consistency of wet sand.

    • Press the cookie mixture into a thin, even layer on parchment paper.

  • Make Cheesecake Filling:

    • Beat cream cheese, powdered sugar, and vanilla extract until smooth.

    • Whip the heavy cream until stiff peaks form.

    • Fold the whipped cream into the cream cheese mixture.

  • Assemble Sushi Roll:

    • Spread the cream cheese mixture evenly over the cookie crust.

  • Roll and Chill:
