This refreshing Strawberry Icebox Pie is a creamy, no-bake dessert that’s perfect for warm weather. With a graham cracker crust, sweetened condensed milk, and fresh or pie filling strawberries, this dessert is easy to make and always a crowd-pleaser.

Ingredients

  1. Graham cracker crust – 1 crust (store-bought or homemade)
  2. Eagle Brand Condensed Milk – 1 can
  3. Cool Whip – 1 regular-size container
  4. Strawberry pie filling or fresh strawberries – 1 can or 1 cup fresh diced strawberries (add 1/4 cup of sugar if using fresh)
  5. Dry Strawberry Jello – 3 1/2 teaspoons
  6. Lemon juice – 1/4 cup

Instructions

  • Mix the base: In a large bowl, combine the condensed milk and Cool Whip by hand until fluffy.
  • Add the Jello: Stir in the strawberry Jello powder and mix well.
  • Incorporate lemon juice: Add the lemon juice and mix again until the mixture becomes thicker and fluffier.
  • Fold in strawberries: Gently fold in the strawberry pie filling (or the fresh, sugar-mixed strawberries) to the mixture.
  • Fill the crust: Spoon the mixture into the graham cracker pie crust.
  • Chill: Refrigerate the pie for at least 2 hours to set.
  • Garnish and Serve: Top with fresh strawberry slices if desired. Slice and enjoy!

  • If using fresh strawberries, be sure to add the sugar to enhance their sweetness before folding them into the mixture.
