This refreshing Strawberry Icebox Pie is a creamy, no-bake dessert that’s perfect for warm weather. With a graham cracker crust, sweetened condensed milk, and fresh or pie filling strawberries, this dessert is easy to make and always a crowd-pleaser.
Ingredients
- Graham cracker crust – 1 crust (store-bought or homemade)
- Eagle Brand Condensed Milk – 1 can
- Cool Whip – 1 regular-size container
- Strawberry pie filling or fresh strawberries – 1 can or 1 cup fresh diced strawberries (add 1/4 cup of sugar if using fresh)
- Dry Strawberry Jello – 3 1/2 teaspoons
- Lemon juice – 1/4 cup
Instructions
- Mix the base: In a large bowl, combine the condensed milk and Cool Whip by hand until fluffy.
- Add the Jello: Stir in the strawberry Jello powder and mix well.
- Incorporate lemon juice: Add the lemon juice and mix again until the mixture becomes thicker and fluffier.
- Fold in strawberries: Gently fold in the strawberry pie filling (or the fresh, sugar-mixed strawberries) to the mixture.
- Fill the crust: Spoon the mixture into the graham cracker pie crust.
- Chill: Refrigerate the pie for at least 2 hours to set.
- Garnish and Serve: Top with fresh strawberry slices if desired. Slice and enjoy!
Notes
- If using fresh strawberries, be sure to add the sugar to enhance their sweetness before folding them into the mixture.
