This Strawberry Earthquake Cake is a deliciously decadent treat featuring a fluffy strawberry cake base, creamy swirls of cream cheese, and a vibrant strawberry glaze. Perfect for spring gatherings, Valentine’s Day, or any time you crave something sweet!

    • 1 box strawberry cake mix (plus ingredients listed on the box)

    For the Cream Cheese Swirl:

    • 8 oz cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract

    For the Strawberry Glaze:

    • 1 cup fresh strawberries, mashed
    • 1/3 cup granulated sugar
    • 1 tablespoon lemon juice
    • 1 teaspoon cornstarch mixed with 1 tablespoon water

    For Garnish (Optional):

    • Fresh strawberries
    • Drizzle of white chocolate

Instructions

Prepare the Cake Base:

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare the strawberry cake batter as per package instructions. Pour the batter into the prepared dish, spreading it evenly.

Make the Cream Cheese Swirl:

  1. In a medium bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Drop spoonfuls of the cream cheese mixture over the cake batter. Swirl gently with a knife to create a marbled effect.

Bake the Cake:

  1. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.

Prepare the Strawberry Glaze:

  1. In a small saucepan, combine mashed strawberries, granulated sugar, and lemon juice. Cook over medium heat until bubbling, stirring occasionally.
  2. Stir in the cornstarch mixture. Cook for 1–2 minutes until the glaze thickens. Remove from heat and cool to room temperature.

Assemble and Garnish:

  1. Drizzle the cooled glaze evenly over the cooled cake.
  2. Top with fresh strawberries and a drizzle of white chocolate (optional).

Notes

  • Swap fresh strawberries for frozen ones when fresh is unavailable.
  • For a richer glaze, add a teaspoon of butter while cooking.
