Ingredients

For the Salad:

2 cups cooked chicken, chopped

4 cups chopped romaine lettuce

2 cups chopped strawberries

½ cup dried cranberries

¼ cup sliced red onion

¼ cup crumbled goat cheese

¼ cup sliced almonds
For the Strawberry Balsamic Dressing:

1 cup strawberries

¼ cup balsamic vinegar

¼ cup extra-virgin olive oil

1 tbsp Dijon mustard

1 clove garlic, minced

¼ tsp salt

¼ tsp pepper

Instructions

Make the Dressing:
In a food processor or blender, combine strawberries, balsamic vinegar, olive oil, Dijon mustard, garlic, salt, and pepper. Blend until smooth and set aside. -
Assemble the Salad:
In a large bowl, toss together chicken, romaine lettuce, strawberries, cranberries, red onion, goat cheese, and almonds.

Serve:
Drizzle the strawberry balsamic dressing over the salad and toss to coat evenly. Serve immediately or drizzle the dressing on individual servings as desired.
