Description

This Strawberry Chicken Salad is fresh, light, and bursting with sweet and savory flavors. Juicy strawberries, tender chicken, tangy goat cheese, and crunchy almonds come together with a homemade strawberry balsamic dressing. Perfect for a healthy lunch, summer dinner, or meal prep!


Ingredients

  1. For the Salad:

    • 2 cups cooked chicken, chopped

    • 4 cups chopped romaine lettuce

    • 2 cups chopped strawberries

    • ½ cup dried cranberries

    • ¼ cup sliced red onion

    • ¼ cup crumbled goat cheese

    • ¼ cup sliced almonds

    For the Strawberry Balsamic Dressing:

    • 1 cup strawberries

    • ¼ cup balsamic vinegar

    • ¼ cup extra-virgin olive oil

    • 1 tbsp Dijon mustard

    • 1 clove garlic, minced

    • ¼ tsp salt

    • ¼ tsp pepper


Instructions

  • Make the Dressing:
    In a food processor or blender, combine strawberries, balsamic vinegar, olive oil, Dijon mustard, garlic, salt, and pepper. Blend until smooth and set aside.

  • Assemble the Salad:
    In a large bowl, toss together chicken, romaine lettuce, strawberries, cranberries, red onion, goat cheese, and almonds.

 

  • Serve:
    Drizzle the strawberry balsamic dressing over the salad and toss to coat evenly. Serve immediately or drizzle the dressing on individual servings as desired.


Notes

  • If you prefer, you can substitute goat cheese with feta or any cheese of your choice.

  • The dressing can be made in advance and stored in the fridge for up to 3 days.

 

  • For added crunch, try substituting the sliced almonds with walnuts or pecans
