Description

A creamy, fruity twist on a Southern favorite—this Strawberry Cheesecake Banana Pudding layers whipped cheesecake, vanilla pudding, bananas, and strawberries with cookies for a chilled dessert that’s as beautiful as it is delicious.

  • 1 (8 oz) package cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 (5.1 oz) box vanilla instant pudding mix
  • 2 cups cold milk
  • 1 box vanilla wafers (or other cookies of choice)
  • 2 bananas, sliced
  • 1 cup fresh strawberries, chopped (plus extra for garnish)
  • Crushed strawberry wafers (optional, for garnish)

Instructions

  1. In a medium bowl, beat the softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, beating until fully combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture. Set aside.
  5. In another bowl, whisk the instant vanilla pudding mix with cold milk for about 2 minutes until thickened. Let sit to firm up.
  6. In a large serving dish or individual cups, layer vanilla wafers at the bottom.
  7. Add sliced bananas and chopped strawberries over the cookies.
  8. Spread a layer of the cheesecake mixture over the fruit.
  9. Top with a layer of vanilla pudding, smoothing it out evenly.
  10. Repeat the layers as needed.
  11. Finish with extra chopped strawberries and crushed strawberry wafers on top.
  12. Cover and refrigerate for at least 3 hours or overnight before serving.

Notes

  • For best texture, assemble a few hours ahead of time and chill thoroughly.
  • Use firm bananas to avoid them becoming mushy overnight.
  • Strawberry shortbread or golden Oreos can substitute for vanilla wafers.
