Beef & Marinade:
- 12 ounces lean flank steak, thinly sliced against the grain
- 2 tablespoons minced fresh ginger
- 1 tablespoon soy sauce
- 2 tablespoons Shao Hsing rice wine or dry sherry
- 2 teaspoons cornstarch
- ¾ teaspoon sugar
- ½ teaspoon salt
- ¼ teaspoon fresh ground pepper
- 3 teaspoons sesame oil
- 1 teaspoon dark soy sauce
For Stir-Frying:
- 1 tablespoon peanut or vegetable oil
- 1 (14.5-ounce) can whole peeled tomatoes in juice
- 4 scallions, halved lengthwise and cut into 2-inch lengths
Instructions
- Thinly slice the flank steak against the grain for tenderness.
- In a medium bowl, combine minced ginger, soy sauce, Shao Hsing wine (or sherry), cornstarch, sugar, salt, pepper, sesame oil, and dark soy sauce. Add the beef slices and toss to coat. Marinate for 15–20 minutes at room temperature.
- Heat the peanut or vegetable oil in a wok or large skillet over high heat until shimmering.
- Add the marinated beef and stir-fry for 3–4 minutes until browned and just cooked through. Remove from the pan and set aside.
- Add the canned tomatoes with their juice to the hot pan. Break the tomatoes up gently with a spatula or spoon and simmer for 2–3 minutes to reduce slightly.
- Return the beef to the pan and stir in the scallions. Stir-fry for 2 more minutes until scallions are tender but still crisp.
- Serve hot over steamed rice or toss with noodles for a complete meal.

- Flank steak works beautifully here, but you can also use skirt steak or sirloin in a pinch.
- Shao Hsing rice wine adds authentic depth—use dry sherry if unavailable.
