Ingredients

  1. For the Steak Bites:

    • 1 lb sirloin steak, cut into bite-sized pieces
    • Salt and pepper to taste
    • 3 garlic cloves, minced
    • 2 tbsp butter
    • 1 tbsp chopped fresh parsley

    For the Rotini and Garlic Parmesan Sauce:

    • 12 oz rotini pasta
    • 3 tbsp unsalted butter
    • 4 garlic cloves, minced
    • 1 cup heavy cream
    • 1 cup grated Parmesan cheese
    • 1 tsp Italian seasoning
    • Salt and pepper to taste

Instructions

Cook the Rotini:

  1. Boil rotini pasta in salted water until al dente (about 10–12 minutes). Drain and set aside, reserving 1/2 cup of pasta water.

Prepare the Steak Bites:

  1. Season steak bites with salt and pepper.
  2. Heat a skillet over medium-high heat and melt butter.
  3. Sear steak bites for 2–3 minutes per side until browned and medium-rare.
  4. Add minced garlic and toss for 1 minute until fragrant.
  5. Remove steak bites from skillet and set aside.

Make the Garlic Parmesan Sauce:

  1. In the same skillet, melt butter over medium heat.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in heavy cream and Italian seasoning, whisking constantly.
  4. Gradually add Parmesan cheese, whisking until melted and creamy.
  5. Season with salt and pepper to taste.

Combine Everything:

  1. Add cooked rotini to the sauce, tossing to coat evenly.
  2. If the sauce is too thick, add a bit of the reserved pasta water.
  3. Return steak bites to the skillet and gently toss with the pasta.

Serve:

  1. Plate the pasta and steak bites.
  2. Garnish with chopped parsley and extra Parmesan, if desired.

Notes

  • Steak Tip: Use sirloin or ribeye for the best steak bites. You can also sear the steak to your preferred doneness, but medium-rare provides the perfect tenderness.
  • Pasta Tip: If you don’t have rotini, any short pasta (penne, farfalle, or fusilli) will work as a substitute.
  • For extra flavor, sprinkle some red pepper flakes for a little heat.
