For the Steak Bites:
1 lb sirloin steak, cut into bite-sized pieces
Salt and pepper to taste
3 garlic cloves, minced
2 tbsp butter
1 tbsp chopped fresh parsley
For the Rotini and Garlic Parmesan Sauce:
12 oz rotini pasta
3 tbsp unsalted butter
4 garlic cloves, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
Cook the Rotini:
Boil rotini pasta in salted water until al dente (about 10–12 minutes). Drain and set aside, reserving 1/2 cup of pasta water.
Prepare the Steak Bites:
Season steak bites with salt and pepper.
Heat a skillet over medium-high heat and melt butter.
Sear steak bites for 2–3 minutes per side until browned and medium-rare.
Add minced garlic and toss for 1 minute until fragrant.
Remove steak bites from skillet and set aside.
Make the Garlic Parmesan Sauce:
In the same skillet, melt butter over medium heat.
Add minced garlic and cook for 1 minute until fragrant.
Stir in heavy cream and Italian seasoning, whisking constantly.
Gradually add Parmesan cheese, whisking until melted and creamy.
Season with salt and pepper to taste.
Combine Everything:
Add cooked rotini to the sauce, tossing to coat evenly.
If the sauce is too thick, add a bit of the reserved pasta water.
Return steak bites to the skillet and gently toss with the pasta.
Serve:
Plate the pasta and steak bites.
Garnish with chopped parsley and extra Parmesan, if desired.
Notes
Steak Tip: Use sirloin or ribeye for the best steak bites. You can also sear the steak to your preferred doneness, but medium-rare provides the perfect tenderness.
Pasta Tip: If you don’t have rotini, any short pasta (penne, farfalle, or fusilli) will work as a substitute.
For extra flavor, sprinkle some red pepper flakes for a little heat.
