  1. 1 sheet puff pastry (thawed)
  2. 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  3. 1 cup ricotta cheese
  4. 1/2 cup crumbled feta cheese
  5. 1/4 cup grated Parmesan cheese
  6. 1 small onion, finely chopped
  7. 2 cloves garlic, minced
  8. 1 tablespoon olive oil
  9. 1 teaspoon dried dill (optional)
  10. 1/2 teaspoon salt
  11. 1/4 teaspoon black pepper
  12. 1/4 teaspoon red pepper flakes (optional)
  13. 1 large egg (for egg wash)
  14. 1 tablespoon water (for egg wash)
  15. Sesame seeds (optional, for topping)

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Prepare the Filling: In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until soft and fragrant. Add spinach and cook until wilted (or warmed through if using frozen spinach). Remove from heat and let it cool slightly.
  • Mix the Cheeses: In a large bowl, combine ricotta, feta, Parmesan, dill (if using), salt, pepper, and red pepper flakes. Stir in the cooked spinach mixture until well combined.
  • Assemble the Pastries: Roll out the puff pastry sheet and cut it into squares (about 4 inches each). Place a spoonful of the spinach mixture in the center of each square. Fold the squares into triangles or fold the edges to create a pocket, sealing them with a fork.
  • Egg Wash: In a small bowl, whisk together the egg and water. Brush the tops of the pastries with the egg wash and sprinkle with sesame seeds (if desired).
  • Bake: Transfer the pastries to the prepared baking sheet and bake for 20-25 minutes or until golden brown and puffed up.
  • Serve: Allow to cool slightly before serving. These pastries are perfect as an appetizer, snack, or light meal!
