Ingredients

Scale
  • 4 sheets gluten-free puff pastry (e.g., Simply Wize Puff Pastry)
  • 200g spinach leaves, washed, dried, and finely chopped
  • 4 spring onions, finely sliced
  • 150g Greek feta, crumbled
  • 50g Parmesan cheese, finely grated
  • 1 egg, whisked
  • Salt and pepper, to taste
  • 150g Greek yoghurt (for dip)
  • Zest of 1 lemon (for dip)
  • 1 garlic clove, minced (for dip)
  • 2 teaspoons extra virgin olive oil (for dip)
  • Pinch of salt and pepper (for dip)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine chopped spinach, spring onions, feta, Parmesan, salt, and pepper.
  3. Roll out each puff pastry sheet and spread the spinach mixture evenly over the surface.
  4. Roll each sheet tightly into a log and slice into 1-inch pinwheels.
  5. Place pinwheels on a baking tray lined with parchment paper, brush tops with whisked egg.
  6. Bake for 15–20 minutes until golden and puffed.
  7. For the dip, mix Greek yoghurt, lemon zest, minced garlic, olive oil, salt, and pepper in a small bowl.
  8. Serve pinwheels warm with the yoghurt dip.

Notes

  • Make sure the spinach is well-drained to prevent soggy pastry.
  • Use fresh gluten-free puff pastry for best results.
  • These pinwheels can be prepared ahead and baked just before serving.
  • The yoghurt dip adds a refreshing tang that balances the richness of the filling.
