- 200g spinach leaves, washed, dried, and finely chopped
- 4 spring onions, finely sliced
- 150g Greek feta, crumbled
- 50g Parmesan cheese, finely grated
- 1 egg, whisked
- Salt and pepper, to taste
- 150g Greek yoghurt (for dip)
- Zest of 1 lemon (for dip)
- 1 garlic clove, minced (for dip)
- 2 teaspoons extra virgin olive oil (for dip)
- Pinch of salt and pepper (for dip)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine chopped spinach, spring onions, feta, Parmesan, salt, and pepper.
- Roll out each puff pastry sheet and spread the spinach mixture evenly over the surface.
- Roll each sheet tightly into a log and slice into 1-inch pinwheels.
- Place pinwheels on a baking tray lined with parchment paper, brush tops with whisked egg.
- Bake for 15–20 minutes until golden and puffed.
- For the dip, mix Greek yoghurt, lemon zest, minced garlic, olive oil, salt, and pepper in a small bowl.
- Serve pinwheels warm with the yoghurt dip.
