- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1/2 pound fresh spinach, washed and drained
- 2 eggs, beaten
- 1 teaspoon soy sauce
- 1/2 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat the oil: In a wok or large skillet, heat the vegetable oil over medium-high heat.
- Stir-fry garlic: Add the minced garlic and stir-fry for about 30 seconds until fragrant.
- Add spinach: Add the spinach to the pan and stir-fry for about 2 minutes until wilted.
- Scramble eggs: Push the spinach to one side of the pan. Add the beaten eggs to the other side and scramble them lightly until set.
- Combine: Once the eggs are cooked, mix them with the spinach.
- Season: Add soy sauce, sesame oil, salt, and pepper. Stir to combine.
- Serve: Serve hot with rice or noodles.
Notes
- For extra flavor, you can add chili flakes for a little heat.
- This dish pairs wonderfully with steamed rice or as a topping for noodles.
- You can also add cooked chicken or tofu for additional protein.
