Description

A quick and healthy stir-fry made with fresh spinach, scrambled eggs, and a delicious touch of soy and sesame oil. This Spinach and Egg Stir-Fry is a perfect light meal or side dish


Ingredients

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1/2 pound fresh spinach, washed and drained
  • 2 eggs, beaten
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  • Heat the oil: In a wok or large skillet, heat the vegetable oil over medium-high heat.
  • Stir-fry garlic: Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  • Add spinach: Add the spinach to the pan and stir-fry for about 2 minutes until wilted.
  • Scramble eggs: Push the spinach to one side of the pan. Add the beaten eggs to the other side and scramble them lightly until set.
  • Combine: Once the eggs are cooked, mix them with the spinach.
  • Season: Add soy sauce, sesame oil, salt, and pepper. Stir to combine.
  • Serve: Serve hot with rice or noodles.

Notes

  • For extra flavor, you can add chili flakes for a little heat.
  • This dish pairs wonderfully with steamed rice or as a topping for noodles.
  • You can also add cooked chicken or tofu for additional protein.
