Ingredients

Scale
  1. 2 cups corn kernels (fresh, frozen, or canned)
  2. 1/4 cup mayonnaise
  3. 1/4 cup sour cream
  4. 1 tablespoon lime juice
  5. 1 teaspoon chili powder (adjust to taste)
  6. 1/2 teaspoon smoked paprika
  7. 1/2 teaspoon ground cumin
  8. 1/4 teaspoon cayenne pepper (optional, for extra heat)
  9. Salt and pepper to taste
  10. 1/2 cup crumbled queso fresco or cotija cheese (for garnish)
  11. 1 tablespoon fresh cilantro, chopped (for garnish)
  12. 1/2 small red onion, finely diced (optional)
  13. 1 jalapeño, finely chopped (optional, for extra spice)
  14. 1 tablespoon hot sauce (optional)

Instructions

  • Prepare the Corn:
    • If using fresh corn, cut the kernels off the cob.
    • For frozen corn, thaw and drain any excess moisture.
    • For canned corn, drain and rinse the kernels thoroughly.
  • Make the Spicy Sauce:
In a medium bowl, combine the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, cumin, cayenne pepper (if using), salt, and pepper. Stir until smooth and creamy.
  • Mix the Corn:
Add the prepared corn to the spicy sauce and toss to coat it evenly.
  • Garnish:
Sprinkle crumbled queso fresco or cotija cheese over the corn. Add chopped cilantro, red onion, and jalapeño for extra flavor and texture. Drizzle with hot sauce if preferred.
  • Serve:
Serve immediately as a snack, side dish, or appetizer. For a chilled version, refrigerate for about 30 minutes before serving.
