Description
Spicy Korean Carrots, also known as Morkovcha, are a vibrant, flavorful salad featuring julienned carrots tossed in a tangy, smoky, and spicy dressing with garlic and aromatic spices. This crunchy, zesty side dish is perfect for adding a kick to any meal.

- 2.2 lbs carrots, julienned
- 3–4 Tbsp white vinegar
- 2 tsp kosher salt
- 1 Tbsp granulated sugar
- 2 tsp smoked paprika
- 1/4–1/2 tsp cayenne pepper
- 1 tsp ground coriander seeds
- 1 tsp freshly ground black pepper
- 5 cloves garlic, peeled & pressed
- 2/3 cup light olive oil (or any neutral oil)
- 1 large onion, diced
Instructions
- Peel and julienne the carrots into a large mixing bowl.
- Add vinegar, salt, sugar, smoked paprika, cayenne, coriander, black pepper, and pressed garlic to the carrots.
- Heat oil in a skillet, then sauté diced onions until golden. Remove onions with a slotted spoon (discard or save for another use).
- Reheat oil until almost smoking, then pour 1/2 cup over the carrots and spices.
- Toss everything together with forks or gloved hands until well mixed.
- Transfer to a sealed container and refrigerate. Best after 6–12 hours!
Notes
- Use fresh carrots for the best crunch and flavor.
- Adjust cayenne pepper to control the heat level.
- Sautéed onions add sweetness but can be omitted if preferred.
- Allow at least 6 hours of refrigeration for flavors to meld.
- Serve chilled or at room temperature.
