Description

Chori Pollo is a bold and flavorful dish that combines juicy chicken cutlets, spicy Mexican chorizo, sautéed peppers and onions, and melty cheese. It’s a one-pan comfort meal with a fiesta of textures and taste—perfect for weeknights or casual gatherings.


Ingredients

  • 7 ounces Mexican chorizo
  • 2 bell peppers (any color), thinly sliced
  • 1 sweet onion, thinly sliced
  • 2 pounds chicken cutlets
  • 2 teaspoons adobo seasoning
  • 8 ounces shredded Monterey Jack cheese or hot queso dip
  • ½ cup chopped green onions
  • ½ cup chopped cilantro

Instructions

  1. In a large skillet, cook chorizo over medium heat until browned and cooked through. Remove and set aside.
  2. In the same skillet, sauté bell peppers and onions until softened.
  3. Season chicken cutlets with adobo seasoning. In another pan, cook chicken until golden and cooked through.
  4. Combine chicken, chorizo, peppers, and onions. Sprinkle with shredded cheese and cover until cheese melts.
  5. Garnish with green onions and cilantro before serving.

Notes

  • Use queso dip for a creamier finish or shredded cheese for a gooier texture.
  • Great served over rice, in tortillas, or with warm bread.
  • Adjust adobo seasoning to taste for more or less heat.
  • Swap chicken cutlets for chicken thighs if preferred.
