- 7 ounces Mexican chorizo
- 2 bell peppers (any color), thinly sliced
- 1 sweet onion, thinly sliced
- 1½–2 pounds chicken cutlets
- 2 teaspoons adobo seasoning
- 8 ounces shredded Monterey Jack cheese or hot queso dip
- ½ cup chopped green onions
- ½ cup chopped cilantro
Instructions
- In a large skillet, cook chorizo over medium heat until browned and cooked through. Remove and set aside.
- In the same skillet, sauté bell peppers and onions until softened.
- Season chicken cutlets with adobo seasoning. In another pan, cook chicken until golden and cooked through.
- Combine chicken, chorizo, peppers, and onions. Sprinkle with shredded cheese and cover until cheese melts.
- Garnish with green onions and cilantro before serving.
Notes
- Use queso dip for a creamier finish or shredded cheese for a gooier texture.
- Great served over rice, in tortillas, or with warm bread.
- Adjust adobo seasoning to taste for more or less heat.
- Swap chicken cutlets for chicken thighs if preferred.
