Ingredients

Scale

Eggs

  • 12 large eggs

Filling

  • â…“ cup mayonnaise
  • 1½ tbsp chili garlic sauce (adjust to taste)

Toppings

  • Smoked paprika (for garnish)
  • Crispy fried onions (for topping)

Instructions

  1. Place eggs in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to a simmer and cook for 10 minutes.
  2. Drain and transfer eggs to an ice bath to cool completely. Peel once cooled.
  3. Slice eggs in half lengthwise. Carefully remove yolks and place them in a bowl.
  4. Mash yolks with mayonnaise and chili garlic sauce until smooth and creamy. Taste and adjust spice level as needed.
  5. Fill the egg whites with the yolk mixture using a spoon or piping bag.
  6. Sprinkle each egg with smoked paprika and top with crispy fried onions.
  7. Chill in the fridge for at least 15 minutes before serving for best flavor.

Notes

  • Use more chili garlic sauce for extra heat or a dash of sriracha for a sharper kick.
  • For a smoother filling, blend yolk mixture in a mini food processor.
  • Crispy shallots can be used in place of fried onions for a fancier finish.
  • Best made fresh but can be assembled a few hours ahead of time.
