These Cajun Potato and Cheddar Sausage Hand Pies are savory, cheesy pockets filled with spiced sausage, potatoes, and vegetables, baked in golden pizza dough—perfect for on-the-go meals or hearty snacks.

- 4 Eckrich Cheddar Smoked Sausage Links, diced
- 12 oz diced breakfast potatoes
- 10 oz diced carrots
- 1 tablespoon Cajun seasoning
- 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups shredded cheese (cheddar, jack, and/or mozzarella)
- 2 refrigerated pizza doughs
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine diced sausage, breakfast potatoes, carrots, Cajun seasoning, salt, garlic powder, onion powder, and shredded cheese. Mix well and set aside.
- Roll out one pizza dough on parchment paper into a 16×12-inch rectangle. Cut into 16 smaller rectangles, about 4×3 inches each. Space them 1/2 inch apart on parchment and transfer to a baking sheet.
- Place 1 heaping tablespoon of the filling onto the center of each dough rectangle, leaving about a 1 1/4-inch border around the edges.
- Roll out the second pizza dough and cut into 16 rectangles of the same size. Place each over the filled dough pieces and crimp the edges with a fork to seal.
- Bake for about 15 minutes, or until the crust is golden brown.
- Remove from oven and serve immediately.
Notes

- Use egg wash before baking for a shinier crust.
