Description

This Chicken Shawarma with Yogurt Sauce is a flavorful and healthy dish featuring tender, spiced chicken marinated to perfection and served in whole-wheat lavash with fresh veggies and a creamy yogurt sauce.

  • For the Chicken:
  • ¾ cup whole-milk plain yogurt, divided
  • 1 small yellow onion, grated
  • 2 tablespoons lemon juice, divided
  • 3 cloves garlic, pressed or finely grated, divided
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground allspice
  • 1 teaspoon ground pepper
  • 1 teaspoon kosher salt, divided
  • ½ teaspoon ground turmeric
  • 2 pounds boneless, skinless chicken thighs
  • For the Yogurt Sauce:
  • ½ cup finely chopped seeded cucumber
  • 2 tablespoons chopped fresh mint, cilantro and/or parsley
  • For Serving:
  • 3 whole-wheat lavash, halved
  • Lettuce leaves & sliced tomato

Instructions

  1. In a large bowl, combine ½ cup yogurt, grated onion, 1 tablespoon lemon juice, 2 cloves garlic, coriander, cumin, allspice, pepper, ½ teaspoon salt, and turmeric. Add chicken and mix well. Cover and marinate in the fridge for at least 1 hour or up to 24 hours.
  2. In a small bowl, stir together the remaining ¼ cup yogurt, 1 tablespoon lemon juice, 1 clove garlic, cucumber, herbs, and ½ teaspoon salt to make the yogurt sauce. Refrigerate until ready to serve.
  3. Preheat grill or skillet over medium-high heat. Cook the marinated chicken until browned and cooked through, about 5–7 minutes per side. Let rest, then slice.
  4. Warm lavash, then layer with lettuce, tomato, sliced chicken, and a generous drizzle of yogurt sauce. Roll up and serve.

Notes

  • The chicken can be marinated for up to 24 hours for maximum flavor.
  • If you prefer, you can substitute chicken breasts for thighs, but thighs will provide a juicier result.
  • Feel free to use any combination of fresh herbs for the yogurt sauce, such as parsley, mint, or cilantro.
  • Serve with your favorite side dishes, like a Greek salad or roasted vegetables.
