Description

These Indian Cheese Twists are a flaky, golden fusion snack that bring bold spices and gooey cheese together in the most irresistible way. Think of them as your favorite bakery-style cheese straws, but with a twist of garam masala, chilli flakes, and a sprinkle of kalonji for that unmistakable Indian flair. Cheese Twists

  • 2 x 320 g sheets ready-rolled puff pastry, cold
  • 75 g mature Cheddar, grated (or vegan alternative)
  • 75 g low-moisture mozzarella, grated or finely cubed (or vegan alternative)
  • 1 small red onion, very finely diced
  • 1 tbsp fresh coriander, finely chopped
  • 1 tsp garam masala
  • ¾ tsp red chilli flakes
  • 2 tsp kalonji seeds (nigella seeds)

Egg-Free “Eggwash”

  • 2 tbsp warm milk (any variety)
  • < ⅛ tsp ground turmeric
  • 1 tsp agave syrup

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Unroll one sheet of puff pastry on a lightly floured surface. Evenly spread Cheddar, mozzarella, red onion, coriander, garam masala, and red chilli flakes over the surface.
  3. Place the second pastry sheet on top and gently press to seal.
  4. Slice into strips (about 1 inch wide), then twist each strip several times.
  5. Place twists on the prepared baking tray.
  6. In a small bowl, mix the warm milk, turmeric, and agave to make the egg-free wash. Brush over each twist.
  7. Sprinkle kalonji seeds on top.
  8. Bake for 20–25 minutes, or until puffed and golden. Let cool slightly before serving.

  • Keep pastry cold until ready to use for best puff.
  • You can prep these ahead and bake just before serving.
  • Try using paneer or crumbled feta for a unique twist.
