Chicken:

  • 1 pound chicken tenders
  • 1 tablespoon avocado oil

Slaw:

  • 2 cups shredded red cabbage
  • 2 cups shredded green cabbage
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons Southwest dressing
  • Juice of 1 lime

Wraps:

  • 4 burrito-sized tortillas (such as Siete Foods Cassava Flour Tortillas)
  • 4 tablespoons Southwest dressing
  • 2 large avocados, sliced
  • 1 cup shredded goat cheddar cheese
  • Tortilla chips (optional, such as Siete Foods Tortilla Chips)

Instructions

  1. In a small bowl, mix together all spice rub ingredients.
  2. Toss chicken tenders with avocado oil and the spice rub until evenly coated.
  3. Heat a skillet over medium heat and cook chicken for 3–4 minutes per side or until fully cooked. Set aside.
  4. In a large bowl, combine red and green cabbage, red onion, cilantro, Southwest dressing, and lime juice. Toss until coated.
  5. Warm tortillas in a dry skillet or microwave until soft and pliable.
  6. Spread 1 tablespoon of Southwest dressing on each tortilla.
  7. Layer each with cabbage slaw, sliced avocado, cooked chicken, and shredded cheese.
  8. Roll up each tortilla tightly to form a wrap. Serve with tortilla chips if desired.

  • For extra heat, add jalapeño slices or a drizzle of hot sauce before rolling.
