Description

A sweet and crunchy nut mix with dried cranberries, coated in a cinnamon-honey glaze—perfect for road trips, snacking, or gifting.

Ingredients

Scale
  • 1 bag (10 oz) pecans
  • 1 bag (16 oz) almonds
  • 1 bag (10 oz) cashews
  • 1 bag (6 oz) dried cranberries
  • ½ cup honey
  • 6 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1½ teaspoons cinnamon

Instructions

  1. In a small saucepan over medium heat, melt together the honey and coconut oil until fully combined.
  2. Remove from heat and stir in the vanilla extract and cinnamon.
  3. In a large bowl, mix the pecans, almonds, cashews, and dried cranberries.
  4. Pour the honey mixture over the nut mixture and toss to coat thoroughly.
  5. Preheat the oven to 275°F (135°C).
  6. Spread the coated mix evenly on a parchment-lined baking sheet.
  7. Bake for 20–30 minutes, stirring every 10 minutes to ensure even toasting.
  8. Remove from oven when golden and fragrant. Cool completely before storing.

Notes

  • For a softer texture, bake closer to 20–25 minutes; for extra crunch, go for 30 minutes.
  • Let the mix cool completely to ensure it crisps up before storing.
  • Great as a homemade edible gift or packed in snack bags for travel.
