- 1 bag (16 oz) almonds
- 1 bag (10 oz) cashews
- 1 bag (6 oz) dried cranberries
- ½ cup honey
- 6 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1½ teaspoons cinnamon
Instructions
- In a small saucepan over medium heat, melt together the honey and coconut oil until fully combined.
- Remove from heat and stir in the vanilla extract and cinnamon.
- In a large bowl, mix the pecans, almonds, cashews, and dried cranberries.
- Pour the honey mixture over the nut mixture and toss to coat thoroughly.
- Preheat the oven to 275°F (135°C).
- Spread the coated mix evenly on a parchment-lined baking sheet.
- Bake for 20–30 minutes, stirring every 10 minutes to ensure even toasting.
- Remove from oven when golden and fragrant. Cool completely before storing.
