Description

This Southern Banana Cobbler brings the rich flavor of banana bread together with the gooey goodness of cobbler and the crisp crunch of a nutty oat streusel topping. Sweet, warm, and perfect with a scoop of vanilla ice cream, this comfort dessert is a true Southern favorite. It’s ideal for family gatherings, Sunday dinners, or anytime you crave cozy homemade baking


Ingredients

For the Streusel Topping:
¾ cup packed light brown sugar
½ cup self-rising flour
½ cup (1 stick) unsalted butter, softened
1 cup uncooked old-fashioned oats
½ cup chopped pecans
For the Cobbler Filling:
1 cup self-rising flour
1 cup sugar
1 cup milk
2 teaspoons banana extract (optional)
½ cup (1 stick) butter, melted
4 ripe bananas, sliced


Instructions

  • Preheat oven to 375°F and grease a 2-quart or 9×9-inch baking dish with nonstick spray.

  • In a bowl, mix brown sugar, flour, and softened butter using a fork until crumbly. Stir in oats and chopped pecans; set aside.

  • In a separate bowl, whisk self-rising flour, sugar, and milk until smooth. Whisk in the melted butter and banana extract if using.

  • Pour the batter into the prepared baking dish and layer sliced bananas evenly over the top.

  • Sprinkle the streusel topping over the bananas.

  • Bake for 45–50 minutes or until golden brown and set in the center.

 

  • Let cool slightly before serving. Optionally, serve warm with vanilla ice cream and fresh banana slices.


Notes

  • For extra banana flavor, use banana-flavored pudding mix in the batter.

  • You can substitute walnuts for pecans or leave out nuts for a nut-free version.

  • Best served warm, but leftovers reheat well in the microwave.

 

  • Add a dash of cinnamon to the streusel for a cozy spice note.
