Description

This hearty casserole combines tender, juicy pork chops with layers of creamy, cheesy scalloped potatoes and savory onions. A perfect comfort food dish that will satisfy your family and guests.

Ingredients

  1. Pork Chops (typically bone-in for more flavor)
  2. Potatoes (thinly sliced, Russets preferred for their starchy quality)
  3. Onions (thinly sliced or chopped)
  4. Cheese (a mix of cheddar or a cheese sauce for layering with potatoes)
  5. Milk or Cream (for the scalloped potatoes)
  6. Garlic (minced or finely chopped)
  7. Herbs (such as thyme or rosemary)
  8. Flour (for making a roux if making cheese sauce from scratch)
  9. Butter (for the roux and for layering)

Instructions

  • Prep the Ingredients:

    • Brown the pork chops in a skillet until they develop a nice sear. Set them aside.
    • Thinly slice the potatoes and onions. Optionally, par-cook the potatoes to reduce baking time.
  • Layer the Casserole:

    • In a greased baking dish, start by layering a portion of thinly sliced potatoes.
    • Top with a layer of onions, followed by a sprinkle of flour (to thicken sauce).
    • Add slices of butter and cheese (or pour cheese sauce).
    • Repeat the layers, adding browned pork chops either in between or on top of the potato layers.
  • Bake:

    • Cover the dish with foil and bake in a preheated oven at 375°F (190°C) until the potatoes are tender and pork chops are fully cooked through.
    • Uncover in the last 10-15 minutes to allow the top to brown.

  • Serve:

    • Let the casserole rest for a few minutes after baking to allow the sauce to thicken before serving.

Notes

  • For a creamier sauce, add a combination of milk and heavy cream.
  • Use any cheese you prefer, though a sharp cheddar will enhance the flavor.

  • Feel free to add vegetables like peas or carrots for extra nutrition.
