This Crock Pot Strawberry and Cream Oatmeal for Two is the ultimate cozy breakfast. Creamy, rich, and bursting with sweet strawberry flavor, it slow-cooks to perfection and makes waking up a delightfully comforting experience.
Ingredients
Scale
- 1/2 lb strawberries, washed and sliced, divided
- 1/4 cup sugar
- 1/2 cup steel cut oats
- 1 cup milk
- 3/4 cup water
- 1 1/2 teaspoons vanilla extract
- 4 oz cream cheese, cubed (1/2 of an 8 oz block)
Instructions
- In a heat-safe mixing bowl, combine 1/2 of the sliced strawberries and sugar. Stir to coat and let them sit for 10–15 minutes to release their juices.
- In your 4-quart slow cooker, add the steel-cut oats, milk, water, vanilla extract, and cream cheese cubes.
- Stir the mixture to combine, then add the strawberry-sugar mixture and the remaining half of the sliced strawberries.
- Carefully place the bowl with the oatmeal mixture into the slow cooker, ensuring it fits and doesn’t touch the lid.
- Cover and cook on low for 4–5 hours, or until the oats are tender and the oatmeal has thickened to your desired consistency.
- Stir the oatmeal before serving to ensure the cream cheese is fully blended in.
- Serve warm and enjoy your creamy, strawberry-infused oatmeal!
Notes
- Do not use old fashioned or quick oats, as they won’t hold up during the long cooking time.
- Using a heat-safe bowl inside the slow cooker helps prevent burning and makes cleanup easier.
- Top with additional fresh strawberries or a drizzle of honey for extra sweetness.
- You can substitute cream cheese with Greek yogurt for a tangier flavor.
