This Slow Cooker Taco Soup is a hearty, flavorful meal packed with ground beef, beans, and spices. It’s perfect for busy nights when you need a comforting and filling dinner. Set it and forget it for an easy dinner the whole family will love

Ingredients

  1. 3 pounds ground beef
  2. 1 onion, chopped
  3. 1 can pinto beans
  4. 1 can black beans
  5. 1 can chopped tomatoes with green chili
  6. 1 can green chilies
  7. 1 packet taco seasoning

Instructions

  • Brown the Ground Beef:
    In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the chopped onion and cook for an additional 2-3 minutes until the onion is softened.

  • Add to Slow Cooker:
    Transfer the browned beef and onions to the slow cooker.

  • Add Remaining Ingredients:
    Add the pinto beans, black beans, chopped tomatoes with green chili, green chilies, and taco seasoning to the slow cooker. Stir to combine.

  • Cook:
    Cover and cook on low for 3-4 hours.

  • Serve:
    Serve hot, and enjoy your hearty Taco Soup! Optionally, top with sour cream, cheese, and tortilla chips for added flavor.

Notes

  • You can adjust the heat by adding more or less of the green chilies.
  • If you prefer a thicker soup, you can mash some of the beans in the soup with a spoon.
  • For a vegetarian version, simply replace the ground beef with a meat substitute or additional beans.
