Description

This Slow Cooker Golden Syrup Sponge is a comforting British dessert that’s incredibly easy to prepare. A fluffy, buttery sponge drenched in sticky golden syrup, it’s the ultimate cold-weather comfort food. Serve warm with custard, clotted cream, or ice cream for the coziest winter treat.

  • 150g golden syrup
  • 175g soft butter
  • 175g caster sugar
  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 175g self-raising flour
  • 3 to 4 tablespoons whole milk

Instructions

  1. Preheat the slow cooker: Preheat your slow cooker. Generously butter a 1.5-pint pudding basin (preferably with a lid, designed for steamed puddings). Pour the golden syrup into the bottom of the basin.
  2. Cream the butter and sugar: In a mixing bowl, cream the butter and sugar until very light and fluffy.
  3. Beat in the eggs: Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Stir in the vanilla extract.
  4. Fold in the flour and milk: Fold in the self-raising flour and 3 tablespoons of milk. Add the 4th tablespoon only if needed to achieve a soft, drop-from-the-spoon consistency.
  5. Spoon the batter: Spoon the batter gently over the golden syrup in the basin. Cover the top with a small circle of foil and secure the lid.
  6. Cook the pudding: Place the basin in the preheated slow cooker. Pour in boiling water until it reaches halfway up the sides of the basin. Cover and cook on high for 3½ to 4 hours.
  7. Serve: Carefully remove the basin using oven gloves. Let it cool slightly, then invert onto a serving plate. The sponge should release easily. Serve warm with custard, clotted cream, or ice cream.

Notes

  • If you don’t have a lid for the pudding basin, you can cover the top with foil and secure it tightly with string or kitchen twine.
  • If the batter seems too thick, add an extra tablespoon of milk until you achieve the desired consistency.
  • Ensure that the slow cooker is fully preheated before placing the basin inside to avoid uneven cooking.
  • For a richer taste, serve with a generous helping of clotted cream or custard.
