Ingredients
Scale
- For the Beef and Potatoes:
- 1½ lbs beef stew meat, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- ¼ cup beef broth
- 1 tbsp olive oil
For the Garlic Butter Sauce:
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp smoked paprika
- ½ tsp dried thyme
- ½ tsp dried rosemary
- ½ tsp salt (or to taste)
- ¼ tsp black pepper
Instructions
- Sear the Beef:
Heat olive oil in a skillet over medium-high heat. Add the beef bites and sear until browned on all sides, about 2–3 minutes per side. Transfer the beef to the slow cooker. - Add the Potatoes:
Place the halved baby potatoes into the slow cooker with the beef. - Prepare the Garlic Butter Sauce:
In a small bowl, mix the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the sauce over the beef and potatoes in the slow cooker. - Add the Broth:
Pour the beef broth into the slow cooker to add moisture and depth to the dish. - Cook:
Cover the slow cooker and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender and the potatoes are cooked through. - Serve:
Serve warm, garnished with fresh parsley if desired. Pair with a side of crusty bread, green beans, or a fresh salad for a complete meal.
Notes
- Make sure to sear the beef before adding it to the slow cooker for added flavor.
- Fresh herbs like rosemary and thyme can be swapped for dried ones if needed.
- This dish pairs well with a side of vegetables or bread to soak up the garlic butter sauce.
