    • 1½ lbs beef stew meat, cut into bite-sized pieces

    • ¼ cup beef broth

    For the Garlic Butter Sauce:

    1. 4 tbsp unsalted butter, melted
    2. 3 cloves garlic, minced
    3. 1 tsp onion powder
    4. 1 tsp smoked paprika
    5. ½ tsp dried thyme
    6. ½ tsp dried rosemary
    7. ½ tsp salt (or to taste)
    8. ¼ tsp black pepper

Instructions

  • Sear the Beef:
    Heat olive oil in a skillet over medium-high heat. Add the beef bites and sear until browned on all sides, about 2–3 minutes per side. Transfer the beef to the slow cooker.
  • Add the Potatoes:
    Place the halved baby potatoes into the slow cooker with the beef.
  • Prepare the Garlic Butter Sauce:
    In a small bowl, mix the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the sauce over the beef and potatoes in the slow cooker.
  • Add the Broth:
    Pour the beef broth into the slow cooker to add moisture and depth to the dish.
  • Cook:
    Cover the slow cooker and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender and the potatoes are cooked through.
  • Serve:
    Serve warm, garnished with fresh parsley if desired. Pair with a side of crusty bread, green beans, or a fresh salad for a complete meal.
