2 pounds beef chuck, cut into bite-sized pieces
1 pound baby potatoes, halved
1/2 cup unsalted butter
6 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Combine Ingredients in Slow Cooker: Add the beef chuck and halved baby potatoes to the slow cooker.
Prepare Garlic Butter Mixture: In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
Add Seasonings: Stir in the Worcestershire sauce, dried thyme, dried rosemary, salt, and pepper into the melted butter and garlic mixture.
Pour Over Beef & Potatoes: Pour the garlic butter mixture over the beef and potatoes in the slow cooker, making sure everything is well-coated.
Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
Finish & Serve: Once cooked, stir gently and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
Notes
You can use any tender cut of beef if chuck isn’t available.
Adjust seasoning levels to your taste; add more Worcestershire sauce for an extra depth of flavor.
