- 1 pound baby potatoes, halved
- 1/2 cup unsalted butter
- 6 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Combine Ingredients in Slow Cooker: Add the beef chuck and halved baby potatoes to the slow cooker.
- Prepare Garlic Butter Mixture: In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
- Add Seasonings: Stir in the Worcestershire sauce, dried thyme, dried rosemary, salt, and pepper into the melted butter and garlic mixture.
- Pour Over Beef & Potatoes: Pour the garlic butter mixture over the beef and potatoes in the slow cooker, making sure everything is well-coated.
- Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
- Finish & Serve: Once cooked, stir gently and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
Notes
- You can use any tender cut of beef if chuck isn’t available.
- Adjust seasoning levels to your taste; add more Worcestershire sauce for an extra depth of flavor.
- For a richer dish, add a little more butter or cream at the end.
