- 1 cup low-sodium chicken broth
- 3 tablespoons butter, cubed
- 8 ounces cream cheese, cubed
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
Instructions
- Place chicken breasts in the slow cooker and season with Italian seasoning, black pepper, onion powder, and thyme.
- Add minced garlic, lemon juice, and chicken broth over the chicken.
- Scatter the butter and cream cheese cubes on top.
- Cover and cook on low for 5–6 hours or high for 3–4 hours, until the chicken is tender.
- Shred the chicken in the slow cooker using two forks.
- Stir in the heavy cream and chopped spinach.
- Cover and cook on high for an additional 15–20 minutes, until the spinach is wilted and the sauce is creamy.
- Serve warm over rice, pasta, or mashed potatoes.
