Description

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • ½ teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • 3 teaspoons minced garlic
  • ¼ cup fresh-squeezed lemon juice
  • 1 cup low-sodium chicken broth
  • 3 tablespoons butter, cubed
  • 8 ounces cream cheese, cubed
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped

Instructions

  1. Place chicken breasts in the slow cooker and season with Italian seasoning, black pepper, onion powder, and thyme.
  2. Add minced garlic, lemon juice, and chicken broth over the chicken.
  3. Scatter the butter and cream cheese cubes on top.
  4. Cover and cook on low for 5–6 hours or high for 3–4 hours, until the chicken is tender.
  5. Shred the chicken in the slow cooker using two forks.
  6. Stir in the heavy cream and chopped spinach.
  7. Cover and cook on high for an additional 15–20 minutes, until the spinach is wilted and the sauce is creamy.
  8. Serve warm over rice, pasta, or mashed potatoes.
