Description
A flavorful stir fry of ground beef, vegetables, and ramen noodles tossed in a savory peanut-soy sauce, perfect for a quick and satisfying meal.
Ingredients

- 1 cup beef broth
- ¾ cup chicken broth
- ¼ cup soy sauce
- 2 tbsp creamy peanut butter
- 2 tbsp honey
- 1 tsp hot sauce (or sriracha)
- ½ tsp ground ginger
- 1 lb ground beef
- Salt and pepper, to taste
- ¼ cup dry white wine (or broth)
- 1 tbsp peanut oil (or olive oil)
- 4 cloves garlic, minced
- 1 yellow onion, sliced
- ½ cup carrots, julienned
- 1 red bell pepper, sliced
- 8 oz white button mushrooms, sliced
- 2 cups shredded cabbage (optional)
- 2 ½ tbsp cornstarch
- 1 (3 oz) packet ramen noodles (seasoning packet discarded)
- 3 green onions, sliced
- Toasted sesame seeds and/or roughly chopped peanuts
Instructions
- Combine all sauce ingredients in a large measuring cup and set aside.
- Season ground beef with salt and pepper. Cook in a large skillet over medium-high heat until browned, 7–10 minutes. Drain and set aside.
- Start boiling water for ramen noodles.
- Add wine to the skillet and cook over medium heat, scraping the bottom, until reduced by half, about 2 minutes.
- Add oil and garlic; cook for 1 minute.
- Increase heat to medium-high, add onions, carrots, and mushrooms. Cook for 5 minutes.
- Add bell peppers and cabbage, cook for another 3 minutes.
- Stir cornstarch into the sauce, then pour sauce into the skillet. Bring to a boil and reduce to simmer once thickened.
- Cook ramen noodles in boiling water for 1 minute, drain, and add to skillet.
- Return beef to the skillet and combine well.
- Top with green onions, sesame seeds, and/or chopped peanuts before serving.
Notes
- Use any vegetables you have on hand for flexibility.
- For a spicier version, increase the amount of hot sauce or add red pepper flakes.
- Substitute ground beef with ground turkey or pork for variation.
- Leftovers can be stored in the fridge for up to 3 days and reheated gently.
