This Simple Chakalaka is a flavorful and spicy South African vegetable relish that pairs perfectly with grilled meats, rice, or fresh bread. Ingredients

  1. 2 tablespoons olive oil
  2. 1 onion, chopped
  3. 2 cloves garlic, minced
  4. 1 bell pepper (any color), chopped
  5. 2 carrots (chopped or grated)
  6. 1 can (400g) baked beans (in tomato sauce)
  7. 12 teaspoons curry powder (adjust to taste)
  8. Salt and pepper to taste

Instructions

  • Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
  • Add garlic and bell pepper, cooking for another 2-3 minutes until softened.
  • Stir in the grated or chopped carrots and cook for 5-7 minutes until they start to soften.
  • Add the baked beans and mix well to combine.
  • Season with curry powder, salt, and pepper. Stir and let it simmer for 10-15 minutes to allow the flavors to meld.

 

  • Serve warm as a side dish or enjoy it on its own!
