- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 2 carrots (chopped or grated)
- 1 can (400g) baked beans (in tomato sauce)
- 1–2 teaspoons curry powder (adjust to taste)
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
- Add garlic and bell pepper, cooking for another 2-3 minutes until softened.
- Stir in the grated or chopped carrots and cook for 5-7 minutes until they start to soften.
- Add the baked beans and mix well to combine.
- Season with curry powder, salt, and pepper. Stir and let it simmer for 10-15 minutes to allow the flavors to meld.
- Serve warm as a side dish or enjoy it on its own!
