This Sicilian Cauliflower Salad is a vibrant and healthy dish that combines the crunch of cauliflower with the bold flavors of Kalamata olives, capers, and fresh herbs. Lightly dressed with olive oil, red wine vinegar, and oregano, this salad is perfect as a refreshing side or a stand-alone dish. Easy to prepare, it’s the perfect addition to any meal or a delicious snack on its own!

Ingredients

  1. 1 medium cauliflower, cut into florets
  2. 1 cup cherry tomatoes, halved
  3. ½ cup red onion, thinly sliced
  4. ¼ cup Kalamata olives, pitted and sliced
  5. 2 tbsp capers
  6. ¼ cup fresh parsley, chopped
  7. 2 tbsp olive oil
  8. 1 tbsp red wine vinegar
  9. 1 tsp dried oregano
  10. ½ tsp garlic powder
  11. Salt and black pepper, to taste

Instructions

  • Steam or blanch the cauliflower florets until tender but still crisp, about 4-5 minutes. Drain and allow to cool slightly.
  • In a large bowl, combine the cauliflower, cherry tomatoes, red onion, Kalamata olives, capers, and fresh parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and black pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Let the salad sit for 10-15 minutes to allow the flavors to marinate.

 

  • Serve chilled or at room temperature. Enjoy!
